Ponderosa Valley Ranch is a family-owned private ranch near La Veta, Colorado. We maintain a small herd of cattle who live happy and humane lives.  Our herd spends most of the time roaming and feeding in lush mountain grass pastures. Our pastures are free from fertilizer and pesticides. Our water comes from the snowpack on East Spanish Peak. The result is beef that is healthier and tastier. Your purchase will also help sustain Colorado's ranching and western heritage.

Pricing

The current price for Ponderosa Valley 100% Grass-fed beef is $5.40/lb based on the hanging weight of the steer at the time of processing.  We are only able to sell in whole and half quantities and the price may fluctuate based on the market price for beef. The price includes the butcher's charges for processing and packaging. While this may seem expensive, you'll find that buying 100% grass-fed beef in bulk is economical over time (and tasty, too).

Nothing beats a freezer full of meat!

 

 

Processing and Packaging

We use Jensen's Blue Ribbon Butcher Shop in Fowler, Colorado for our butchering, processing, and packaging. They are a full-service butcher shop and hang and age the meat for ideal tenderness. They also offer Cryovac packaging, which is vacuum-sealed and preserves your meat longer in the freezer.

 

Choosing Your Cuts

A great thing about purchasing direct and in bulk is the option to choose some of your cuts. You will have a choice of cut size/weight, thickness, and the amount of meat/cuts in a single package. Click here for an example of the different cuts and options. You'll be provided with Jensen's contact information once they are ready to process and package your beef, according to your preferences.

 

Storing Beef

You should plan to have 16-20 cubic feet of freezer space for a whole steer and 8-10 cubic feet for a half.  If you are concerned about freezer space, you may want to consider purchasing a whole or half among a group of people (your friends will thank you!!).

 

If requested, you have the option to purchase beef from cows who primarily graze and whose finishing feed is is all-natural grain and corn ("grass-fed, grain-finished"). Some people prefer the taste of this type of beef and our grain-finished beef still contains much of the benefits of 100% grass-fed beef. PURCHASE INFORMATION
  • Grass-fed meat tends to be much lower in total fat than grain-fed products
     

  • Grass-fed animals have more omega-3s than grain-fed animals. Omega-3s are formed in the green leaves (specifically the chloroplasts) of plants. 
     

  • The meat and milk from grass-fed ruminants are the richest known source of another type of good fat called “conjugated linoleic acid” or CLA.
     

  • There is no USDA marketing standard for "grass-fed beef". This means that the meat in  the store sold under the label "grass-fed" could potentially be from cattle that only spent a relatively short time eating grass.
